Sweet Pea Frittata

Microgreens Sweet Pea Frittata

  • 3 cups pea shoots
  • 6 eggs
  • 2 tbsp whole milk
  • 1/2 tsp Himalayan salt
  • 1/8 tsp fresh cracked pepper
  • 2 tbsp butter, grated
  • 2 tbsp minced onion
  • 2 tbsp fresh parmesan cheese
  • 1/2 cup mozzarella cheese, grated
  1. Oil a square baking dish and set aside

  2. Preheat Oven to 350 degrees

  3. Chop pea shoots in 1 inch pieces and put in a bowl.

  4. Add eggs, milk, salt and pepper with minced onion and stir until blended.

  5. Add the pea shoots and stir in gently.

  6. Add the parmesan cheese and 1/4 cup of mozzarella cheese and combine. Pour mixture in square baking dish.

  7. Top with the 1/4 cup of mozzarella.

  8. Bake 350 degrees for 20-25 minutes checking that all the egg mixture is firm and moist.

We used a glass square dish so the layer of eggs would be thicker in the pan.

The pepper kernels are a combination of black, pink, green and white.  

The milk can be substituted for low-fat or nonfat or goats milk.
